Did you know that according to the Natural Resource Defense Council 40% of US food goes uneaten?

That amounts to 20 pounds of food per person each month and 165 billion dollars wasted each year. California is in a drought, and think about all of that wasted water that goes into the production of stuff that nobody eats! And where does all that uneaten food go? Most of it is left rotting in landfills where it accounts for 25% of methane emissions in the United States. Oh, and we have not even started talking about the world hunger epidemic.

It’s time to start a conversation about food waste here on campus. Slow Food Club is hosting a “Take what you can eat” campaign this week at every lunch in the dining hall to assess how much food is thrown out just from us putting too much on our plates.
